Last week definitely did not go as planned. When I made last weeks menu I forgot to take into account that I was having my wisdom teeth pulled Wednesday and probably wouldn’t feel up to cooking, ha. So, there are a few repeats this week!


Monday: Leftover Pasta & Garlic Bread from the Barilla House Party

Tuesday: Creole Mexican Catfish with Rice and Frozen Veggies


Catfish: caught by my son!

Wednesday: Stromboli & Salad

7 days worth of dinners for $21!


The kids and I don’t eat much and my husband isn’t home for dinner most days so we are trying to eat more leftovers to cut down on waste. Another budget-friendly note about this weeks menu: the only thing I had to go out and buy today was the cream cheese!! Everything else we already had!
