Get Back to the Table with Libby’s Vegetables + Giveaway! (NOW CLOSED)

by Stephanie on April 4, 2009

whole_kernel_sweet_corn

Kim Burton, wife of NASCAR driver Jeff Burton, has partnered with Libby’s Vegetables to encourage moms to connect with each other and share their winning solutions for getting back to the dinner table during these economic times.

Libby’s canned vegetables make it easy to pull together quick, convenient and cost-effective meals on a budget so that you can spend less time cooking, and more time with your family.  You can now print a coupon from their website to save 50¢ on 2 cans of Libby’s Vegetables!

Kim has some winning solutions for getting the family back to the dinner table:

Team up for Success – “Don’t go it alone! Your husband and kids have great ideas, so get the whole family into the kitchen.”

Keep it Quick, Simple, and Fun – “When it comes to family dinners, think affordable, simple AND delicious. Try using a crock-pot or making a casserole like Libby’s Kicked Up Mac and Cheese.”

Embrace Dinnertime – “Most busy families wish for more time together – dinnertime is the perfect solution. Regular family dinners are one of the best things a busy family can do to stay close.”

Moms can stop by the Libby’s Get Back to the Table Tent at select race tracks through May to meet Kim Burton and share winning solutions for getting the family back to the table.  The best ideas will be included in Libby’s Table Talk Guide.  Visit Get Back to the Table for more information and to submit your best tips online.

Since Kim and her family are on the road a lot, she has to get creative in her cooking. It’s hard to make a complicated recipe using several pots and pans when cooking in a motor home! She relies on her crockpot, and a pantry stocked with Libby’s vegetables to make cooking easier. One of her family’s favorite meals is Kicked-up Mac & Cheese. The meal appeases her vegetarian daughter and sneaks peas into her son’s diet.

Kicked-up Mac & Cheese

kicked-up-mac-cheese

Ingredients

* 1 package (14.5 oz.) macaroni and cheese dinner
* 1?2 c Milk
* 1?2 c butter, divided
* 1 cn (15.25 oz.) libby’s sweet peas, drained
* 1 cn (15 oz.) libby’s whole kernel sweet corn, drained
* 1 jar (4 oz.) diced pimentos, drained
* 1 1?2 c panko bread crumbs

Instructions

Prepare macaroni and cheese with milk and 1/4 cup butter, following package directions. Gently stir in peas, corn and pimentos. Place in a 3-quart casserole dish. Melt remaining 1/4 cup butter, mix with breadcrumbs and sprinkle evenly over casserole. Place under broiler about 2 minutes or until top is lightly browned.

I love Libby’s corn in a recipe my aunt gave me. It’s easy, inexpensive to make and a crowd pleaser.

Saute onion, garlic and bell pepper (all minced) in butter or olive oil. Add a can of corned beef (I prefer Libby’s for this too – break it up with spoon), a large can of diced tomatoes and a can of Libby’s corn (undrained). Season to taste (I add Tabasco for a little kick) and serve over rice. Enjoy!

43 Maria K April 4, 2009 at 11:16 pm

Libby’s sweet corn is my families absolute favorite. The corn is so tender and crisp we don’t even need to add any butter to enhance the flavor. Thanks for the chance to enter.
