Menu Plan Monday 1/11

I am still participating in the Pantry Challenge and it’s going great!  I’ve written out my menu plan for the entire month and it was a little too easy – what does that tell you about my stockpile?  I’m really hoping this challenge will whittle my stockpile down to a manageable size!

The only groceries I’ve bought this month are coffee creamer, milk, and shredded cheese.  I also got my first box of produce from the veggie co-op I just joined.  For just $20 every 2 weeks I get a big box of a variety of fruits and vegetables.  It’s a great deal and forces me to include a wider variety of produce in our diets.

Even though it has been quite a while since I’ve posted my menu plan, I wanted to give you a peek at what we’re eating (and assure you that we aren’t just eating tomato sauce and chocolate chips!).

Monday:  Spaghetti and Meat Balls with Garlic Toast and Salad

Tuesday:  Beef Stew and Bread Machine Rolls

WednesdayCheesy Broccoli and Rice with Chicken

Thursday:  Chicken Pot Pie Soup

Friday:  Turkey Meatloaf, Mashed Sweet Potatoes, and Green Beans

Saturday:  BBQ Chicken Calzones

Sunday:  Leftovers or maybe Quesadillas

I am also in the DFW area and would love some info on the co-op. The one that was recommended to me by a friend is $50 every other week. I like the sound of $20 much more!

Hi ladies!

I don’t know if the co-op that I am in is looking for more members, but check around in your area to see if there is one you could join. You could also start your own! Gather up some friends and neighbors, I’m sure you could find several people to join!
