Since Kim and her family are on the road a lot, she has to get creative in her cooking. It’s hard to make a complicated recipe using several pots and pans when cooking in a motor home! She relies on her crockpot, and a pantry stocked with Libby’s vegetables to make cooking easier. One of her family’s favorite meals is Kicked-up Mac & Cheese. The meal appeases her vegetarian daughter and sneaks peas into her son’s diet.

Kicked-up Mac & Cheese

Ingredients

* 1 package (14.5 oz.) macaroni and cheese dinner
* 1⁄2 c Milk
* 1⁄2 c butter, divided
* 1 cn (15.25 oz.) libby’s sweet peas, drained
* 1 cn (15 oz.) libby’s whole kernel sweet corn, drained
* 1 jar (4 oz.) diced pimentos, drained
* 1 1⁄2 c panko bread crumbs

Instructions

Prepare macaroni and cheese with milk and 1/4 cup butter, following package directions. Gently stir in peas, corn and pimentos. Place in a 3-quart casserole dish. Melt remaining 1/4 cup butter, mix with breadcrumbs and sprinkle evenly over casserole. Place under broiler about 2 minutes or until top is lightly browned.

That was Libbys theme song when I was growing up…It really made my childhood a pain…But I like Libbys green beans, with bacon and onions added…don’t for get the little bitty baby new potatoes…thanks

  12. I love Libby’s corn in a recipe my aunt gave me. It’s easy, inexpensive to make and a crowd pleaser.

    Saute onion, garlic and bell pepper (all minced) in butter or olive oil. Add a can of corned beef (I prefer Libby’s for this too – break it up with spoon), a large can of diced tomatoes and a can of Libby’s corn (undrained). Season to taste (I add Tabasco for a little kick) and serve over rice. Enjoy!
