Menu Plan 1/10 – 1/16

I know. It’s been a long time since I shared my weekly menu plan (I just checked and my last one was 1 year ago today! ha!). This year our family hopes to put a lot more effort into making healthier eating choices, so I’d really like to get back into sharing my menu plan with you all in hopes that it will keep me accountable!

I also hope this will show that you can coupon and not eat boxed foods every day. 🙂 Just remember that we’re a work in progress, I’m not claiming that we have it all figured out yet!

Breakfasts:

Oatmeal (we eat this most mornings)
Homemade Blueberry Mini Muffins, Fresh Fruit
Bacon, Egg, and Cheese Biscuit Cups, Fresh Fruit
Peanut Butter Toast, Fresh Fruit

Lunches:

Leftover Beef Soup from last week
PB&J, Sliced Carrots
Grilled Chicken Wraps using leftover Grilled Italian Chicken
Annie’s Mac & Cheese, Fresh Fruit
Homemade Chicken Nuggets, Fresh Fruit
Leftover Chicken Noodle Soup

Dinners:

Grilled Italian Chicken, Homemade Dinner Rolls, Salad
Stuffed Green Bell Peppers
Steak, Garlic Mashed Red Potatoes, Steamed Green Beans
Chicken Noodle Soup, Homemade Crusty French Bread
Homemade Pizza
Dinner at a Friend’s House
Grilled Pork Chops, Roasted Red Potatoes, Baked Zucchini

We recently purchased 70 pounds of grass-fed beef from my parents and received 40 pounds of all-natural chicken from Zaycon Foods. We also get a large box of fresh produce every 2 weeks from a produce co-op. The rest of our food is typically purchased by shopping sales and using coupons.

  1. What is your produce coop? I have been looking for one. I have some friends that would like to try it also. We figure even if one of us has to drive to pick it up it would be worth it.
