Last week was a lot of work but I’m glad I did it! Doubling the Enchilada recipe actually made enough for 3 meals! They are SOOO good too! The lasagna was a big hit too! So, for 2 nights of a lot of work ( I think it took me around 5 hours total) I was able to make 5 big meals. Now, on nights when I’m not up to cooking, I can run to the freezer instead of McDonalds! There is a lot of comfort in knowing that there are homemade meals in my freezer.
