Daily Frugal Tip: Shred and Freeze Chicken Breast

Here’s another great frugal tip to help you save money on meat. This one comes from Jennifer:

“I love to buy boneless skinless chicken breast when it is on sale for $1.69 a pound.  Then I trim any excess fat, and put it all in my crockpot.  After it has cooked, I shred it and freeze it in smaller packages (sandwich bag size).  Then I can pull one out, pop it in the microwave for one minute and add it to recipes for a quick dinner.  We have chicken spaghetti, chicken tacos, fajitas, chicken casseroles, etc.  It makes for a very easy dinner when I’m short on time.”

  • I've been doing exactly this for a few years now. It's great! What I do is spray crockpot with cooking spray, put two breast halves (thawed) into the crockpot, add water filling it to one inch above the chicken, add a nice pinch of salt and pepper and that's it. I cook it on high for 3.5 to 4 hours or sometimes on low for 6 to 6.5 hours. When it's done you can drain and toss the water or pack it away and use it as chicken broth for next time, which I usually do. You can use two forks and pull apart the breast meat. The meat comes apart very easily!! If the chicken is still bland you can always sprinkle salt or sprinkle any other seasoning.
