8 Delicious Eggplant Recipes

Oh, the eggplant. You love it or you hate it. Rich in fiber, low in calories and such a range of nutrients. It’s definitely an acquired taste, but with the right preparation, you can turn anyone into an eggplant aficionado.

There are so many delicious ways to make eggplant, and in some cases, you may not even know you’re eating eggplant! Here are some recipes that will convince even the pickiest veggie eater:

  1. Grilled Eggplant with Garlic and Herbs via Every Last Bite. Simple, yet delicious. Grilled Eggplant is always an easy way to go if you don’t have time to look up a recipe. They even give you the idea to use the grilled eggplant as a bun. Great idea!
  2. Eggplant Parmesan via Table for Two. This would be a really great recipe to trick your kids with, because you don’t even see the Eggplant. 
  3. Baba Ganoush (Eggplant Dip) via Feasting at Home. This reminds me a lot of a hummus and is very universal. You could bring it to a potluck or enjoy it as a spread on a sandwich or burger.
  4. 3-Ingredient Baked Eggplant Chips via Pure Wow. Recipes always attract me when they don’t have a lot of ingredients. This truly is one of the easiest recipes. Eggplant, oil, and salt. Easy!
  5. Eggplant Caponata viaColey Cooks. This is a Sicilian dish that is vegan and gluten free. It has a sweet and sour flavor to it. I’ve had it, and it’s amazing! 
  6. Eggplant and Italian Sausage Gratin via The Cafe Sucre Farine. Another italian dish that’s sure to make all your friends want the recipe. Definitely not for the diet conscious!
  7. Quinoa Stuffed Eggplant with Tahini Sauce via Simply Quinoa. Eggplants as food boats? Genius! Not to mention, I’m a huge fan of quinoa. Only takes 30 minutes to make and it’s packed with veggies. 
  8. Baked Eggplant Fries with Greek Tzatziki Sauce via The Mediterranean Dish. This recipe is very easy to make and are on the healthier side because they are baked. If you love fried food, you could turn this into fried eggplant fries as well. 

No matter what recipe you decide to make, just be sure to never use too much oil so your eggplant is not soggy and slimey. Enjoy!
