I haven’t had a chance to go to the store yet this week, so I don’t know the prices of all the ingredients for my menu. I’m just going to post it without the cost breakdown. Also, we’ve been getting tired of eating so much leftover food, so this week we will have only one leftover night. I will be freezing half of almost every single meal this week. That should make the next few weeks much easier!
Monday: Meatloaf, Mashed Potatoes, and Veggies
Tuesday: Mini Chicken Pot Pies
Wednesday: Easy Italian Pasta Bake, Veggies, and Crusty French Baguette
Thursday: Cheesy Chicken Potato Chowder (from the freezer) and Crusty French Baguette
Friday: Slow Cooker Lasagna, Salad & Breadsticks
Saturday: Tacos, Beans, and Rice
Sunday: Leftovers

This crockpot lasagna sounds amazing! I just printed out the recipe. This is so on my list for next week. Here's my menu for the week:

Kori,
I'm really looking forward to trying it - glad to hear a good review!
Amy,
The potato chowder is really good! I made it just like the linked recipe except I added chicken. Very filling and it goes so well with the crusty french baguette!
Those are all meals that my family would enjoy. I might have to try that chicken potato chowder.
I put my menu together late this week, but it's up HERE on my cooking blog if you'd like to see it.
I make that East Italian Bake all the time its super delish though if you substitute italian sausage for the ground beef. Thats a favorite around here! :)
