Baking Day Part 1 | Baking List
It’s Baking Day! What is “Baking Day”, you ask? Baking day is when you spend a large chunk of time cooking several meals for the purpose of freezing for later use. In 6 – 8 hours I can make enough meals to last our family an entire week (or more) plus various other things.
Baking Day is being hosted by Money Saving Mom and Life As Mom. Those two are far more experienced with bulk cooking than I am, since I’ve only done this a handful of times, so be sure and visit their blogs for some great tips! Hundreds of people are participating in Baking Day and are live-tweeting/blogging about it. If you would like to follow all the baking day fun, just search for the hashtag #bakingday. You can also follow Money Saving Mom, Fish Mama (Life as Mom), and ME on twitter.
I actually did a baking day last week (well, it was more cooking than baking) and it was a huge success! I made a ton of meals and it has saved me so much time and sanity by not having to deal with cooking dinner every night! You can read an excellent post HERE about how bulk cooking can save you time and money.
Alright, here is what I am making today:
Pumpkin Chocolate Chip Muffins
Banana Bread
Chicken Pot Pie Soup
Breakfast Hot Pockets
Stuffed Bread Sticks
Veggie Lasagna
Vegetarian Chili
Cinnamon Rolls
Red & Black Beans (1 lb each)
4 Pie Crusts
Everything is going well so far! Okay, back to work! I’ll have some pictures of my progress coming up soon!

In the recipe for the pot pie soup, it says “pie crust for single pie crust”. What is that? I first thought it was teh already made pie crust, but I doubt I’m correct.
Stephanie
@Bree, You can use a pre-made pie crust or you can use homemade, either one. It says single, because a lot of pre-made pie crusts come with 2 crusts -a top and a bottom. For this recipe you just need 1 crust though.

By the way, I tried the Pumpkin Chocolate Chip Muffins and they were really good! The batch made plenty so I shared some with my in-laws, who at first were hesitant about the pumpkin and chocolate together, but really liked them. I even had some left over to freeze for later, and they taste just as fresh later after popping them into the microwave for a few seconds.
Stephanie
Glad you liked them! They are hands down my favorite muffins!

Stephanie,
Thanks so much for all the receipies…they look sooo yummy, can’t wait to try them. But I was wondering how do you freeze the Cinnamon Rolls? Do they become soggy after defrosting?
Stephanie
Roni,
I froze them like this: http://www.lynnskitchenadventures.com/2009/10/freezing-cinnamon-rolls.html

How do you keep the goods from not getting freezer burned?
Stephanie
Leilani,
The Ziploc/Hefty freezer bags work really well. I’ve never had any food that I’ve had in the bags get freezer burned. However, the pre-made goods never last long at our house anyway.

I have never heard of chicken pot pie soup before. I printed it to try it one day. Sounds really good. Thanks for sharing the breakfast hot pockets. I am going to attempt them one day.

Stacie,
You will not regret making that soup! Best pot pie recipe I’ve ever tried!
